raw, it smells like watermelon, tastes a bit like papaya.
roasted, it is transformed: nutty-flavored cross between a sweet potato and a pumpkin.
When I lived in the far north of Japan my neighbors would invite me frequently to eat dinner (so that I could give English lessons to their kids, I think) and we often had kabocha and noodles as fall deepened.
