When law enforcement uses illegal means to catch fraud, it usually works out that charges are dismissed, and rightfully so. Why you would think it’s okay for private interests to violate the law in a similar fashion is troubling.

Actually, that’s not right. The proper response would be to punish both the cop, personally, and the thief who broke the law. By dropping charges you are essentially just being complicit in the next theft that they commit.
