The reason we have two words for everything like that in English is because of the Norman conquest. The Normans took over, and they weren’t going to be standing around in shit herding cattle, so when they said “Boeuf”, they were referring to the stuff on their plate. When the Saxon who was actually tending the animal referred to it, he called it a “Cow”. So we got one word for the meat, one word for the animal, due to class and language differences between the ruling and peasant classes.

Oh, and the Normans didn’t really eat horse so we don’t have a word for that meat.

So, if we followed that linguistic trend, horsemeat would be some derivation of cheval.

Also, English is a really slutty language, but in a good way.
