I looked at the Serious Eats recipe for it, they wanted 450 oven for 60-80 minutes iirc. This one went 65 for an hour, then I backed it off to 350 for another few. Should have gone 350 from the get go. Seasoned butter rub.

That’s the recipe I used! I’ll crank it down after 45 minutes then. That’s when I’m going to start the gravy anyway. I made the base of the gravy last night so it’s just the roux and go today.

I made a keto cheesecake last night too and the raspberry coulis this morning. The meat stuffing was made a few days ago so I’ll pop it in the oven shortly.
