I don’t think there IS a paygrade for E-5 < 2yrs.

Yes, there is. It’s possible to enlist as an E-1 and make E-5 in less than 2 years (although not common).

The other reason for an E-5 <2 year column on the pay scale is that OCS and WOCS candidates are paid as E-5, and most of them are straight out of basic training.
