The meat itself has the texture I’m talking about. Very fine-grained, and, well, gross.
I should stop complaining about European foods I dont’ like. Some little old ladies are going to rush in here in a minute and force-feed me herring and fruit compote if I don’t mind my manners.
I hate tongue, it just has that mushy texture that disgusts me.
But my son, as a teenager, was a guest at someone’s house and they served tongue, and he loved it! It has been his favorite meat ever since.
When I last visited him and his wife, she served sweet-and-sour tongue which I tasted, and it was delicious and not even mushy. I guess it depends on how it is prepared.
