What’s a good place to do so? And by good, I mean one where more money gets back to the primary producer.

I cook a lot of Persian food, so I can definitely vouch for the yummy goodness of dried limes in stews and sumac (esp. on kebab, nom, nom, nom).

I know like, three Persian recipes; fesanjan, eggplant stew, and cardoon stew. Is there a cookbook (or other source) you’d recommend?
