Velveeta mac and cheese was the first upgrade my mom made when she stopped regularly serving the blue boxes. I think she still uses a large proportion of it in her current mac and cheese.

My mother had a thing about Velveeta. She called it plastic cheese and would not buy it. I used to go over to a neighbor lady’s house and get Velveeta sandwiches from her. (Yes, I was a weird kid, and it’s no surprise I turned into a weird adult.)
