The chef that did the community kitchen demo I went to talked about it. She at varying times in her career taught home ec and was involved in trade programs for teens. She said she realized how bad it was getting when she had a class of about 40 and during the first theory session she was babbling on about this and that until one of the students stopped her to ask a question. “Ms X you keep talking about ‘from scratch’ what does that mean?” So she said okay how many of you have parents or grannies that have down a roast dinner on Sundays.’ No hands went up. “Okay have you ever seen any of your parents cut up veggies and make something like soup.” Still no hands. One kid “I thought soup only came from a can.” Then quite astounded she asked “Okay have you or have you ever seen your parents boil and egg?” No hands went up. She had to literally start from ‘scratch’.

Over the years they have had to adjust the program because more and more kids were coming in with practically nothing and no exposure to cooking except from boxes, cans or pouches.
