I presume that a communion wafer is not enough to trigger someone’s celiac disease. The issue seems to be parsing Canon Law over what constitutes unleavened bread (and the fact you can buy communion wafers over the Internet which doesn’t make any sense).

And rules about unleavened bread go back to when the Eastern Church split off from the Catholic Church, so they’re probably pretty pedantic about it.
