I had some hummus and some eggplant stuffing my neighbor made. She’s cooking all her favorites for a Thanksgiving on her own, and she’s taking two weeks to make and eat it all if she needs to. The stuffing had eggplant, shrimp, ham and breadcrumbs. Tasted like really good stuffing, and not at all like eggplant.
