Odd. Can’t think of anything that would make NYC water that special. Most of it does run through 80+ miles of aqueduct, but otherwise it’s pretty much eastern NY/PA water from the Catskills/Poconos.
Try pizza in Florida with their water. Then try NY pizza. Yes, major, major difference. One of my co-worker’s old roommates owns a small pizzeria chain in Florida, and they have the dough made in NY and shipped down before they finish making the pizza.
I don’t think there’s anything special about our water. It’s just that water in a lot of other places is just that much worse (sulfur being a key problem).
