Much baking to do today. Gluten free cookies, gluten free bread, gluten free chocolate shortcake to go under some really, really good strawberries. (The hubby is gluten-intolerant.)

I’ve got the gluten free baking down pretty well now, though let’s face it, people bake with wheat flour for a reason. It works better.

I really need to help the aforementioned husband work on his g-f skills. He is a good baker, but since he can’t use wheat flour any more, and as he hasn’t had a chance to work on his g-f skills, he hasn’t done much the last 2 or 3 years. If I get hit by a truck or something he’ll be in trouble, and we wouldn’t want that.

I’m working on developing gluten-free gluten so people can stop worrying.
