I’ve heard of ‘Thomas Keller’s caramelized roast zuchini’ and I thought no way. So I’m testig the hypothesis. Split in half, scored about 1/4” deep, a little salt rubbed on into the scores, left on a rack. A good 2-3 tablespoons has come off already. Pat dried and put in the fridge to further dry out.
