So now I want to know how a 90 degree edge behaves differently from a beveled edge.

I’m going to guess that a beveled edge has the ability to “cut” into the ice better, the difference between trying to clear your windshield with a CD box (Square) vs an ice scraper (beveled). But I bet a beveled edge wears faster (thinner metal at the point of contact).

Do I win a prize? (Remember, I’m a non-skiing muldoon)
