You can still get Coke made with sucrose, at least around Jewish holidays. Corn syrup apparently isn’t Kosher, but cane sugar is fine, and Coca Cola accommodates this by bottling it’s product made with cane sugar in 2-liter bottles. The cap is yellow instead of red. If your local store doesn’t carry it, you can ask the manager to get some for you.

Corn syrup is used otherwise because it’s cheap and abundantly available. But as far as metabolism, they’re both so similar as to be identical.

And corn syrup is used in the US because of sugar “support” from the government, raising the price of sugar, while farm supports lower the price of corn products.
