Sounds good to me. I’ve got to roast a chicken this week (that’s good for a couple of meals (and I’ll pull out either a orange glaze for that, or a za’atar blend).
Here is a marinade that is really easy, and doesn’t overwhelm the taste of the chicken:
1/2 c. extra virgin olive oil
1 1/2 Tbsp. balsamic, wine or cider vinegar
1 1/2 Tbsp. brown sugar
1 tsp. kosher salt
1/2 tsp. black pepper
1/2 tsp. paprika
3-4 cloves garlic, crushed.
1/2 tsp. herbes de provence
