Looks yummy, but yeah, the pastry would be excellent.
Might try something like that myself since we don’t feel compelled to eat meat at every meal and our son and daughter-in-law are vegetarians.

Roasted squash and cannellini beans along with onions that have been sautéed for some caramelization. Rest of the filling I used was ricotta cheese, a beaten egg, and then more cheese (cubes of smoked gouda and both shredded gruyere and parmesan.) It reheats fairly well for use as leftovers as well.

I was also tossing in diced green chiles and a bit of cumin as a spicing change-up.

And I suspect that the cheese and egg “base” can handle a lot of other combinations with it.
