Brisket makes THE BEST chili! Brown it hard so it has a real nice bark before you cut it. That adds such a fantastic layer of flavor. I also like the onions to get browned real good, because that changes the flavor slightly, too.
Would you recommend using a cast iron skillet for browning the meat?
I bought a cast iron skillet a couple of years ago but I hardly ever use it because it is heavy as fuck. But I have heard that it’s worth the weight lifting.
