They knew how to soak dried corn kernels in limewater and how to pair corn with companion nutrients. Two centuries of human suffering could have been avoided if Spanish explorers had recorded the instructions for processing and serving maize. Nixtamalization was no secret—many of the steps occurred outside of houses in easily observed public areas. The Europeans chose not to pay attention to this key practice.”
