Thanks for the extended response. I’ll note down the smaller distilleries as things to search for.
Right now my cabinet contains two St. George’s: the blue label is Botanivore, the green is Terroir. I keep them next to one another in the hope they’ll reproduce. The first is more balanced, the second is intensely spruce-y (because it’s made with spruces), which was initially mouth-puckering but I’ve learned appreciate. Good tonic water (Fevertree) has gone a long way towards making me understand the appeal of a G&T.
I’ve also got a bottle of Old Tom done by Ransom Spirits; very different. Supposedly it’s a historical recipe, which hits both my food and history nerd-love. Lots of coriander and citrus—very different, quite nice.
