Do what we do with the left overs. Put some aside for sandwiches and make Turkey Noodle Soup out of the rest. If it’s a ham, same thing except you make ham and bean soup. Both good on a cold winter day.
Well, see, that’s the thing: I use it up—turkey sandwiches, turkey pot pie, turkey soup, creamed turkey, blah, blah, blah.
You can take the carcass and get a lot of stuff from it (usually the basis for the soup).
