we picked this weekend to smoke a pound too
it goes in at 4pm as things cool down because it’s too damn hot here
unfortunately we are limited to Publix’s finest cuts of salmon
this is my jealous face

Caught it Tuesday - 15lbs or so. Got 4lbs of filet in the picture. Another 2 1/2 lb filet is in the fridge covered in dry rub for gravalax. Gave a few pounds away to neighbors and friends, and had fillets for dinner on Wednesday night ourselves. Wife said no more salmon for a while…but the bite is on and one of the local boats texts me when they come in with them…and they deliver. So I’ll probably do this again after the 4th.
