You realize cabbage cooked in bacon grease is a very popular eastern European dish (Polish, Slovak, etc.). And then there is Wilted Lettuce that uses heated bacon grease as a dressing. I believe that is attributed to Germans.

Maybe not salad in the leafy sense but mmm mmm, German potato salad with bacon and bacon drippings is divine!
