After the first fry, mine wound up resting for about 10-15 minutes before I turned the temp up and getting the second fry. I’ve heard reports that this helps them get crispier, but as this is the first time trying with this method, I don’t know if it was that or if it was the soak/low fry/high fry combination.
My suggestion would be 2 reasons
1. Drying the raw potatoes
2. the second fry (this is handy also if the fries are part of a meal - cook them early then do the second fry just before serving)
Not sure which is the most important. We never bothered with the soaking - I’ve not heard that option before. (Never too old to learn something new about home made fries)
