Part of a bigger issue, namely that we have a food industry that does not concern itself with health and a health-care industry that does not concern itself with nutrition.
Michael Pollan writes a lot on food and points out that the lowest possible margin for food producers is from selling us healthy, wholesome & organic products that we prepare ourselves.
The highest margin comes from selling us highly processed products made from bulk corn and wheat with some with added chemicals tossed in for flavor.
So what do we expect to see the market flooded with?
pollan makes it so easy:
Eat food. Not too much. Mostly plants.
If it needs a brand or has āingredientsā itās not food.
(If your grandmother wouldnāt recognize it, itās not food.)
