I do fist-size individual balls - kind of like round meatballs. When I did it on Monday I just lumped four in a loaf pan (2 for each of us) together.
The outside actually crisped up a little bit, which was nice - good counterpoint to the falling-apart insides.
Hehehe. Time for you to consider cooking Scotch Eggs. :)
