In Los Angeles at the Carnercerias ( Mexican meat Markets) you can get just abount any cut of meat you want, but I wouldn’t eat liver ever again if you wrapped it up in 24K gold and Platinum and told me I could keep the metal if I’d eat the meats! Bleugh!!! I haven’t eaten liver since I was 6 years old and threw it back at my mom and got grounded for a month for wasting food.
I know a guy who used to apply 24K gold leaf to his Thanksgiving turkey. It’s perfectly edible.
I don’t know that I’ve ever run across gilt liver, though.
