Actually, there’s a way to explain this in the storyline: The Terminators are cybernetic organisms i.e. human flesh over a metal endoskeleton. It’s long been established in the series that future generations of Terminators are becoming more and more lifelike so as to become completely indistinguishable from humans in appearance, behavior, etc.

Evidently, the aged appearance could be a result of programming for some certain mission (maybe it was a long term mission and aging was added to allow the machine to blend in more easily as time passed) or could be a tactical choice i.e. nobody expects an old grey haired guy to be able to crush them like a tin can.

It is, I admit, a bit of a stretch, but fortunately the Terminator universe is one in which something like this can be explained away without getting too ridiculous.

Wasn’t the reason given in the last one he was in was that he was the military person that the Terminator disguise had been based and had aged since the template had been created? (Though why all Terminators would look like the same guy would be an obvious weakness - I presume that the Colonies in BSG eventually caught on that the Cylons were all following a limited set of templates.)
