If I counted in base 2, with each finger representing the next power of two (2^0, 2^1, &c) I only need two hands, and therefore only one person.

Yep, and I thought about that, but it is so hard using the fingers individually - especially the ring finger independent of the middle or pinky - that base two is not really doable.
