OK LGF, I probably bought too much legal, farmed, from the local grocery store salmon. Bad to re-freeze what I over purchased? My ziplocks are not strong storage from experience. Maybe for a couple of days…. Better to just cook the whole pile and have salmon over salad for a few days?
Cure that stuff. It takes 5 days but the results are so worth it.
You can skip the smoked salt and just replace with regular kosher salt. Add some fresh dill and a bunch of lemon zest for a nice twist. It’s soooo worth it.
