That’s an excellent question. I don’t know if they’re easier, or if people are just used to raising them.

And not, for example, reindeer. Or guinea pigs. Or rats.

It’s about conversion efficiency. Pounds of meat per pound of feed. Catfish produce about a pound per pound. Lots a catfish raised in the south.
