Iām cooking out of Diana Kennedy right now.
Just made pibil and sieved Yucatecan beans. Iām going to have to gear up for mole, but I suspect one of more of those is next (Iāve done a mole verde before); though some of the Oaxacan ingredients are hard to find. I learned to downright love epazoteāused cooking with beans, itās like a bay leaf but better, and used as an herb itās way better than itās gasoline aroma. Iām thinking about throwing in to Indian dal, just to see what happens.
