I don’t use butter either.
Here in the souf where I am, many folks season their veggies with bacon grease. Every vegetable my grandmother cooked, just about, was seasoned with bacon. She had a jar in her kitchen where she kept the left-over bacon grease.

PINK! You’re familiar with that, I’m sure?

Of course! I try to go moderate with the bacon and drippings, though …but my grammaw had the same thing, she had one of those old aluminum cannister things that she kept hers in. One of my favorite dishes is corn cooked with bacon and onions ….just brown the chopped up bacon, saute thinly sliced onions in the grease, add the corn and a little half and half. Perfect!
