There is a reason that we Americans have pretty much settled on beef, chicken, and pork as our meats of choice. There are all kind of bland, inoffensive tasting meats. Kind of the least-common-demonimator of the meat world.

Could be. Lamb has a distinctive taste to it that a lot of people object to. It isn’t all that popular, even though most of the lamb sold in the US is of extremely high (prime or better) quality.
