Damn… now you got me thinking I might want to fix up a stuffed poblano pepper, maybe with beef and rice, some cumin, oregano, onion….. and some refried beans along side.
Off to the food store to get the fixings.

FWIW… This came out just like I had hoped. Now I have to jot down what I did so that I can make it in the future. Nice taste, just a hint of some warmth, a nice smoky rich flavor from some smoked paprika, the poblanos have a great taste when they soften up, get nice and mellow.
I’ll give this on 5 stars.
