Infinity minus one equals the highest number possible before infinity which isn’t a number. I’m confused.

Since infinity isn’t really a number but a concept of a endless unbounded set. It’s treated like a number somewhat incorrectly, but removing something for an unbounded set doesn’t diminish the set.
