Hmm. Doing turkey prep.

Not as difficult as it sounds since it’s a smoked turkey breast and the only real work is reheating it. But going to do that and use the cooking time to do some rosemary and thyme roasted potatoes at the same time.

Why turkey today? Simple, I won’t be able to do it tomorrow or Tuesday evening due to dinner engagements. I’ll be the main one eating it since my brother is a vegetarian and my niece is not that fond of turkey. And if I reheat and slice up the bird today I get a carcass and time to make a killer smoked turkey broth for soup for Wednesday. Which I think both of them *will* consider eating.

Turkey soup! I did the same for Ts-giving turkey, but froze it and made soup twice. Put lots of carrots, celery and onion in it with noodles or rice and they very well might eat it. : )

Share your roasted potatoes recipe, please? I have rosemary and thyme plants. And a 10 lb bag of Idahos (some will be used for potato salad to go with the spiral ham).
