Their existence is proof that there was an author or authors, but their existence is not evidence that a prophet by the name of Jesus wrote them.
This is a hairy/hoary problem.
Had there been texts mentioning Jesus dating from the time he was supposedly active, there would be no question.

This is true of many historical figures, Plato might be a good example.
