Well that really is the thing about the Dark Horse series and then KOTOR.

For all of his creative abilities, Lucas created something that he personally was not bright enough to properly explore.

The Sith as black and white and almost comical creatures in their one dimensionality coupled with the perpetually whiny Lucas hero is fine as far as it goes.

However, Sith that are intelligent, and almost seductively evil, where the Darkside has an argument to be made for it, that one must then fight through - coupled with flawed Jedi who struggle with moral questions in a more grown up way is vastly more appealing. Comparing sith training to Jedi training is fascinating if you want to make a mythos out of it.

Also the idea of the Starwars universe being old - deeply old - like Middle Earth, adds a certain gravitas to the whole thing.

Then there is the simple fact that in the movies, Palpatine lacked class and the Jedi lacked balls.
