I make a pretty exceptional sweet potato pie myself, very tasty and simple to make with the exception of getting (almost) all the “strings” out while mixing.

Just have to mix by running the beaters at low speed several times to entangle the strings in the blades before wiping them off. Not a big deal really, just avoid making the mix frothy by using too high a speed.

A hint about the strings in sweet potato pie: I have a handheld CuisineArt immersion blender to mix the sweet potatoes and other ingredients.
The pie comes out of the oven as a very fluffy custard and it doesn’t “fall”.
Mmmmm.
