re: #530 allegro

Seems to be chili day at LGF. I took some out of the freezer this morning for tonight’s dinner. Perfect cold weather fare.

I always make a big pot of chili when I know it is going to be real cold. Put some together yesterday. Had some for lunch. Always better the second day. I still use some ground beef, but it gets tons of beans (black and pinto) lots of peppers, both green and pablano peppers, tons of onions and lots of dried spices like cumin, chili, onion, garlic, red pepper. I can’t give up the beef, but it has fallen down the list as far as the dominant ingredient. And, very little tomato sauce…only one can…the rest is all beef broth and one can of vegetable broth.
