You aren’t supposed to eat the skin of the tongue. At least when I was inspecting meat departments in the 70’s the butchers would have tongue slow cooked and peel off the skin and just serve the inside. I have never had it since, though.
The meat itself has the texture I’m talking about. Very fine-grained, and, well, gross.
I should stop complaining about European foods I dont’ like. Some little old ladies are going to rush in here in a minute and force-feed me herring and fruit compote if I don’t mind my manners.
