I like cooking with shoulder. (butt). It’s got so much fat laced through it that it’s almost impossible to make it go bad. I’ve done it in brazes (Chili verdi), slow roasted it slathered with minced onion and oregano, smoked it low and slow with just a simple rub.

I’ve done this recipe once before and it was wooooooooooooonderful. Tonight it will be with mini-street tacos and some cabbage slaw, pico de gallo, and cheese. Tomorrow leftovers will be with rice and a black bean and corn salsa.
