Sicilian American Sugu Sauce ~ Or Sunday Gravy ~ 1 Med. Sized Deep cooking pot

Finely dice 1 regular size onion
Add to 3-4 tbsp light olive or canola oil
Simmer onions for 6 minutes, stirring to prevent burning
Add 4 cloves garlic, minced. Simmer about 3 minutes
Remove pot from heat
Add to pot:
3 cans Contadina Tomato Paste
9 cans water~Fill each can three times, scrapping as much paste off the sides as you can
Dry Ingredients:
This is an immigrant recipe, so to make up for using the more acidic tasting canned paste, they add sugar.
3 scant teaspoons, table teaspoons, not a measuring teaspoon, of sugar for each can of paste used so 9
1 teaspoon dried basil
1 teaspoon salt
1/2 ~ 1 teaspoon crushed red pepper flakes and seeds
Add dry items to pot. Heat at med high, stirring often in a 8 pattern on the bottom of the pot to keep from sticking
Simmer at slow boil for 1 and 1/2 hours. Keep skimming foam and oil off of top of sauce. Basta!
Keeps for about 2 weeks in the fridge.
