Have an OT question for you, since you’ve taken Digital Media courses - pictures are supposed to be “automatically” copyrighted upon creation, but if there’s no way of figuring out the original copyright holder and the image is posted all over the place (e.g. lolcat pics), can you still get in hot water for using it? (say, to accompany a blog post)

Well, if it relates to the blog post there’s probably a decent case for fair use. But, as a general rule, lack of knowing who holds the copyright on something is no protection from unprotected infringement, nor is the fact that it may be posted all over the place. If you don’t feel you have a fair use argument for including such an image, then you shouldn’t use it.
