As we’ve seen in US history, what is considered “white” is always a bit… fluid. When the Irish came, they were not white. Nor were the Italians, or those from Scandinavia. I’m sure there were some who were suspicious of zee Germans, as well. But now they all qualify as white to all but the most racist among the alt-right.

Correct. And you didn’t even bring up how religion influenced that as well.
