I had thought that putting the show on AMC would make it lose some of the horror, but then I thought about it. You really don’t need to show the explicit gore— the situations are often bad enough, and done right can be just as creepy and disturbing as anything in the books.

AMC does a good job with the violence and gore on Breaking Bad. And they even showed some boobies on it recently! (although it was strippers wearing pasties.) ;)

I’ve also heard about a proposed movie based on World War Z. I don’t know how they would film that book, but I hope they can do it justice.
