Tonight’s food pr0n action:
Parmesan risotto and seared shrimp. Plus for the risotto was using some of the smoked turkey-based broth from Christmas time - it added some nice additional flavor hints that regular chicken broth just doesn’t have. However, I had to penalize the dish heavily since I did not use a good aged and strong Parmesan. What I did use was pretty flat in flavor and made everything suffer. The shrimp was pre-cooked and frozen. Key with it was searing it in a hot pan while still frozen. That got the sear flavors on the outside while just thawing the rest of the shrimp without overcooking it further. And a glass of a nice white wine to go with it all.

Tonight…New Orleans style Sloppy Roast Beef Po Boys.
I miss them so. It was my go-to meal after a late night on the town in NOLA.
