And it would require them to completely change their recipes, the layout of the kitchens, etc. etc., which they have spent decades and probably millions of dollars experimenting with and designing.
I suspect he is talking about order-taking kiosks. They might or might not be a good cost-saving measure, but they won’t be cheap and they can’t multitask. A cashier can also wipe down tables when orders slack off, a kiosk can’t.
